2019 Dry Riesling: Grown along the prestigious St. David’s Bench appellation of the Niagara Escarpment, our 2019 Dry Riesling shows a refreshingly impactful style associated with top tier wines from the escarpment. This wine shows tremendous versatility in many ways. It can be refreshing in summer or help to enjoy a hot meal on a cold night. Its ageability could easily be 15 years in cellar. As in all well-made Rieslings, a pleasant and subtle note of petrol will appear as it progresses. After 5 years, more of the honeyed and softer tropical fruit notes should appear.
Windrush Food Pairings: Starters and mains will match up well because of their mutual lively crispness. Foods with a higher fat content – think Foie Gras, Rillettes or smoked sausages – pair nicely. Equally well paired is vegetable-laced seafood dishes like crab cakes, smoked salmon or sushi. Be mindful of spice and heat with a dry Riesling as it may intensify both spice and acid components.
